Sourdough Bread
(450F 20 minutes with steam + 420F 20 minutes)
- AP flour 350g
- Salt 7g
- Water 230g (70%)
- Fed Starter 80g ( For unfed starter → starter 15g, water to 240g (70%) )
- Mix all the ingredients.
- Fold 4 times every 15 minutes.
- Rise 5 hours at room temperature until doubled.
- Shape in a basket.
- Second rise in the refrigerator for 8-12 hours.
- Score and bake.

- I lost most of my sourdough bread photos. Maybe I can find some later on my partner’s phone.
- I prefer using a Dutch oven. It is much easier to bake.
