Sourdough Bread

(450F 20 minutes with steam + 420F 20 minutes)
  • AP flour 350g
  • Salt 7g
  • Water 230g (70%)
  • Fed Starter 80g ( For unfed starter → starter 15g, water to 240g (70%) )


  1. Mix all the ingredients.
  2. Fold 4 times every 15 minutes.
  3. Rise 5 hours at room temperature until doubled.
  4. Shape in a basket.
  5. Second rise in the refrigerator for 8-12 hours.
  6. Score and bake.

  • I lost most of my sourdough bread photos. Maybe I can find some later on my partner’s phone.
  • I prefer using a Dutch oven. It is much easier to bake.
