Cream Cheese Walnut Bread

(350F 23min, for big two pieces)

[Dough]

  • Water 100g
  • Sugar 30g
  • Dry yeast 3g
  • AP flour 250g
  • Salt 2g
  • Egg 1
  • Unsalted butter 15g
  • Walnut, a fistful

[Filling]

  • Cream cheese 200g
  • Powdered sugar 20g


  1. Knead all ingredients except butter and walnut.
  2. Add butter and knead until absorbed.
  3. Add Walnut to the dough and fold a few times.
  4. Rise for an hour (until doubled).
  5. Whip the cream cheese with the powdered sugar until smooth.
  6. Divide the dough into two.
  7. Flatten the dough into a long shape, pipe the cream cheese mixture, and close.
  8. Cut the edges so it doesn’t burst during baking.
  9. Egg wash and bake.
